Weighing in well over 10 pounds, a whole brisket is a daunting piece of beef, and all power to you if you want to cook the entire thing. We find dividing this beast into two cuts is not only more manageable but also lets you dial in the cooking method best suited to the leannes of each. Our second cut brisket is the smaller of the two, available in 2½ to 4½ -pound portions of Black Angus pasture-raised beef, and is heavily marbled. The abundance of ivory fat running throughout this USDA Prime beef makes the second cut far more forgiving than the first, capable of standing up to dry-heat cooking methods like slow roasting and smoking without losing its moisture.
