Delivery and Transit Times

Even with the best insulation, perishable foods need to reach you within 3 days for maximum freshness. How do we ensure this?

At checkout, you’ll see automatically-calculated shipping options based on your order date and delivery address:

  • If you live within a 3-day ground transit range (yellow or green on zone map), you’ll receive free FedEx® Ground shipping on orders $250 or more.
  • If you live beyond a 3-day ground transit range (blue on zone map or outside USA), your order will ship FedEx® 3-Day Express.
  • As we do not ship over weekends, ALL orders placed on Friday will show 1-Day Priority or Overnight delivery options only.

How your product is preserved in transit

  • KŌSH fresh proteins are blast frozen for freshness at the processing plant. (See why frozen is fresher.)
  • Each serving is individually vacuum sealed. Not only does this lock out oxygen, bacteria and freezer burn, it creates naturally sealed portions that you can defrost and enjoy on your schedule.
  • Packed in Green Cell Foam® 100% compostable shipping coolers. The perfect combination of sustainable technology, thermal performance and shock protection. Depending on the product need, it is cooled in transit with dry ice, ice packs or both.
  • Shipped in minimal and sustainable boxes. Whenever possible, we pack your full order in one box with as little packaging as necessary to keep your food safe and fresh. We want to preserve the beauty of our G-d-given planet and every action helps!
  • Shipped Monday-Thursday only. While packed well enough to endure a delivery delay, we avoid shipping perishables on Friday to prevent an unnecessary weekend layover.

How to defrost your KŌSH delivery

THE FRIDGE METHOD

Place your vacuum-sealed package in the refrigerator for between 24-48 hours. Temperature should remain between 33°F and 39°F.

 

THE COLD-WATER METHOD

Completely submerge your vacuum-sealed package in a slightly-cold water bath or under slightly cold running water. Depending on the product’s size, it will defrost quickly, evenly and safely in 1-3 hours.

Refreezing: From a taste perspective, we don’t love the idea of defrosting and refreezing proteins. But as long as it has never dipped above 40°F, it is technically safe to refreeze meat and poultry within 3-5 days and fish within 2 days.

Meat, poultry and fish should never be left on a counter to defrost.

How fresh food is frozen?


Unless you live on a ranch, your food is almost certainly frozen at some point before it reaches you: there’s simply no other way to preserve its freshness and safety as it travels long distances.

  • But not all freezing is created equal. In the typical supply chain, proteins can be frozen over the course of many hours. This allows their cells to expand slowly, creating the ice crystals you’re familiar with from your home freezer and altering the natural tastiness of the food.

     

    Food may then be handled by multiple distributors, switching between warehouses, loading docks and vehicles, often partially thawing between freezers.

  • Slower freezing, more refreezing, higher loss of prime quality taste. At KŌSH, we ensure your food is blast-frozen at the point of origin, which drastically reduces the time it takes to go from room temperature to fully frozen.

     

    From the processing plant, we bring it directly to our warehouse freezers, then pack and ship it to your front door, maintaining its temperature consistency and taste profile all along.

Food so good there’s a weight list

How product weight ranges work:

KŌSH raw proteins are hand-cut to bring you optimal flavor in every ounce. For this reason, we can only approximate the weight of certain products. The food we ship depends on the size, weight and shape of each individual animal it is cut from.

So how much are you ordering? Simple:

With every product, we list a weight range spanning an appropriate amount for its size. Heavier products such as catering briskets can range a full pound in either direction. Lighter items such as fish fillets will span just an ounce or two. Prepared foods, including sausages, patties and sliced meats generally include an exact weight.
