You can slice this 1½ -pound rack down into chops to be cooked individually, but the proper move — especially as a centerpiece to a big family dinner, holiday feast, or just a treat-yourself restaurant-level meal at home — is roasting it whole. What Cut of Lamb Is the Frenched 8-Bone Chop Rack? Despite its fancy name, a Frenched rack of lamb is just a rack of ribs, with rib meat attached, trimmed down and polished up for a night out. It comes from the middle of the animal, where, like the adjacent loin primal, it’s cushioned from the exertion that whittles away fat and builds up connective tissue. This makes the rack among the tenderest cuts on the lamb, and as with its beef analog, you can approach cooking low-and-slow in the oven (for a whole roast) or hot-and-fast on the grill or stovetop (for individually carved lollipop chops).
